Ingredients
- 2 cups cooked chicken breast, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers (any color)
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 8 large flour tortillas
- Cooking spray or additional olive oil (for cooking)
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Prepare the Filling:
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onions and bell peppers to the skillet and cook until they are softened, about 5 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Stir in the shredded chicken, chili powder, ground cumin, salt, and pepper. Cook until the chicken is heated through, about 3-4 minutes. Remove from heat.
- Assemble the Quesadillas:
- Heat a clean skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of olive oil.
- Place one tortilla on the skillet and sprinkle a generous amount of cheddar cheese and Monterey Jack cheese over half of the tortilla.
- Add a portion of the chicken mixture on top of the cheese.
- Sprinkle a bit more cheese over the chicken mixture (this helps the quesadilla stick together).
- Fold the tortilla in half to cover the filling.
- Cook the Quesadillas:
- Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and crispy and the cheese is melted.
- Carefully flip the quesadilla using a spatula and cook the other side until it’s also golden and crispy.
- Remove from the skillet and let it rest for a minute before cutting.
- Serve:
- Cut the quesadilla into wedges and serve hot.
- Garnish with your favorite toppings such as sour cream, salsa, guacamole, or chopped cilantro.
Enjoy your Cheesy Chicken Quesadillas, a delicious and satisfying meal that’s perfect for any occasion!
