Description

This Classic Potato Salad is creamy, tangy, and perfect for picnics and barbecues.


Ingredients

Scale
  • 2 pounds potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tablespoons sweet pickle relish
  • 2 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 10 minutes. Drain and cool.
  • In a large bowl, combine mayonnaise, mustard, celery, onion, relish, and eggs.
  • Add cooled potatoes and mix gently to combine. Season with salt and pepper.
