This Classic Potato Salad is creamy, tangy, and perfect for picnics and barbecues.
Ingredients

- 2 pounds potatoes, peeled and cubed
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 2 tablespoons sweet pickle relish
- 2 hard-boiled eggs, chopped
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 10 minutes. Drain and cool.
- In a large bowl, combine mayonnaise, mustard, celery, onion, relish, and eggs.
- Add cooled potatoes and mix gently to combine. Season with salt and pepper.
- Chill in the refrigerator for at least 1 hour before serving. Garnish with paprika.
