- 8 oz (225 g) spaghetti
- 1 lb (450 g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh parsley
- 1 lemon, juiced
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Cook spaghetti in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, and sauté for 1 minute until fragrant.
- Add shrimp to the skillet, and cook until pink and opaque, about 3-4 minutes.
- Add cherry tomatoes to the skillet, and cook for another 2 minutes.
- Stir in cooked spaghetti, fresh parsley, and lemon juice. Toss to combine.
- Season with salt and pepper to taste. Serve immediately, garnished with Parmesan cheese.
