Description

A hearty enchilada filled with seasoned ground beef and black beans, topped with a rich enchilada sauce.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, rinsed and drained
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce

Instructions

  1. Preheat oven to 350ºF.
  2. Cook ground beef until browned; add black beans.
  3. Fill tortillas with beef mixture and cheese, roll, and place in a baking dish.
  4. Pour enchilada sauce over and top with remaining cheese.
  5. Bake for 25 minutes until cheese is bubbly.

Notes

Tips: Use lean ground beef to reduce fat content.
