A hearty enchilada filled with seasoned ground beef and black beans, topped with a rich enchilada sauce.

- 1 pound ground beef
- 1 can black beans, rinsed and drained
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 2 cups enchilada sauce
Instructions
- Preheat oven to 350ºF.
- Cook ground beef until browned; add black beans.
- Fill tortillas with beef mixture and cheese, roll, and place in a baking dish.
- Pour enchilada sauce over and top with remaining cheese.
- Bake for 25 minutes until cheese is bubbly.
Notes
Tips: Use lean ground beef to reduce fat content.
