- 1½ cups enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 jalapeños, sliced
Instructions
- Preheat oven to 375ºF.
- Mix cheddar cheese with sliced jalapeños.
- Fill tortillas with cheese mixture, roll, and place in a baking dish.
- Cover with enchilada sauce and top with Monterey Jack cheese.
- Bake for 20 minutes until cheese is melted.
