Description

These enchiladas are made with diced chicken, green chiles, and a creamy sauce, offering a milder, tangy flavor.


Ingredients

  • 1 ½ pounds boneless skinless chicken breasts, diced
  • 1 can diced green chiles
  • 8 large flour tortillas
  • 3 cups Mexican-blend shredded cheese
  • 1 batch green enchilada sauce

Instructions

  1. Preheat oven to 350ºF.
  2. Cook chicken with green chiles until done.
  3. Fill tortillas with chicken mixture and cheese, roll, and place in a baking dish.
  4. Pour green enchilada sauce over and top with cheese.
  5. Bake for 20 minutes until cheese is melted.
