- 1 ½ pounds boneless skinless chicken breasts, diced
- 1 can diced green chiles
- 8 large flour tortillas
- 3 cups Mexican-blend shredded cheese
- 1 batch green enchilada sauce
Instructions
- Preheat oven to 350ºF.
- Cook chicken with green chiles until done.
- Fill tortillas with chicken mixture and cheese, roll, and place in a baking dish.
- Pour green enchilada sauce over and top with cheese.
- Bake for 20 minutes until cheese is melted.

Tips: Add a dollop of sour cream for extra creaminess.
