Description

A hearty and nutritious burrito filled with roasted sweet potatoes, black beans, and scrambled eggs


Ingredients

  • 4 large eggs
  • 1 cup roasted sweet potatoes, diced
  • 1/2 cup black beans, cooked and drained
  • 1/4 cup shredded pepper jack cheese
  • 4 flour tortillas

Instructions

  • Scramble the eggs in a non-stick skillet until fully cooked. Season with salt and pepper.
