- 1 cup roasted sweet potatoes, diced

- 4 flour tortillas
- 1/4 cup salsa
- 1/4 cup chopped green onions

Instructions
- Scramble the eggs in a non-stick skillet until fully cooked. Season with salt and pepper.
- Add roasted sweet potatoes and black beans to the eggs and mix well.
- Warm the tortillas in a separate pan or microwave.
- Place an equal amount of the egg, sweet potato, and black bean mixture on each tortilla.
- Top with shredded pepper jack cheese, salsa, and chopped green onions.
- Roll up the tortillas, folding in the sides to enclose the filling.
- Serve immediately or wrap in foil for later.
