Description

This Mediterranean-inspired burrito combines spinach, feta cheese, and tomatoes for a fresh and flavorful breakfast.


Ingredients

  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup diced tomatoes
  • 4 whole wheat tortillas
  • 1/4 cup tzatziki sauce (optional)
  • Salt and pepper to taste

Instructions

  • Scramble the eggs in a non-stick skillet until fully cooked. Season with salt and pepper.
  • Add chopped spinach and cook until wilted.
  • Warm the tortillas in a separate pan or microwave.
  • Place an equal amount of the egg and spinach mixture on each tortilla.
  • Top with crumbled feta cheese and diced tomatoes.
  • Roll up the tortillas, folding in the sides to enclose the filling.
  • Serve immediately or wrap in foil for later.
