Description

Ingredients

  • 4 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced zucchini
  • 1/4 cup shredded mozzarella cheese
  • 4 whole wheat tortillas
  • 1/4 cup salsa
  • 1/4 cup chopped spinach
  • Salt and pepper to taste

Instructions

  • In a non-stick skillet, sauté bell peppers, onions, and zucchini until tender.
  • Add eggs to the skillet and scramble until fully cooked. Season with salt and pepper.
  • Warm the tortillas in a separate pan or microwave.
